“We make our own fresh mozzarella for one reason, because when you buy the stuff that already comes in a bucket. Who knows how long it has been in that bucket. It’s quite simple actually. It’s more technique than anything else. The temperature of the water is a major factor. Your three ingredients are mozzarella curd- which is cheese in its base form, hot water and we use sea salt. and we form them into balls. It is about a fifteen minute process to get to a final product. Freshness is the key.You can taste the difference. The softness of the cheese and the flavor is there.”
