BOSTON (CBS) – Portobello mushrooms make a great meat substitute for vegetarians, but carnivores and herbivores alike will appreciate the flavor of grilled Portobellos.
With their meaty flavor and firm texture, Portobello mushrooms are ideal for both grilling and roasting, and Fresh Grocer Tony Tantillo has tips for how to select and prepare the perfect Portobello.
Look for light brown color all the way around, and a slip that turns over under the cap.
Grill your mushrooms cavity side-down first, then flip them onto the tops. After you flip, add olive oil, salt and pepper. Cook for two to three minutes on each side.
One meal suggestion is to add cheese to the mushroom cavity while grilling, and serve the cheesy mushroom in a sandwich.
