Phantom Gourmet: Modern Rotisserie In Newton

NEWTON (CBS) -- If you're in the mood for comfort food, then she's the woman you need to see.

"Thank you, have a great day. Grits with bacon and cheese with is amazing. Have a great day, enjoy. This chicken is so tender. There's always something special happening on our stovetop."

For 20 years, Marjorie Druker has owned and operated the New England Soup Factory in Newton, where she makes soul satisfying soups from scratch every day.

"We always have chowder, and lobster, chili, beef stew, chicken pot pie," Marjorie says.

And when a spot next to the Soup Factory opened up recently, Marjorie decided it was time to expand, so she opened The Modern Rotisserie right next door.

"Everyday it's something really creative, really different, and really delicious," she says.

Modern Rotisserie is like a gourmet version of the old Boston Chicken, which makes sense because Marjorie actually helped start that restaurant straight out of culinary school. And now, 30 years later, she's dusted off many of her classic comfort food recipes and created delicious new dishes to appeal to more modern tastes.

"Some people want things a little bit funkier and cooler, and what people are eating today," Marjorie says.

So while you'll still find old school favorites like mashed potatoes and gravy, butternut squash, and cranberry jam, you can also enjoy salads, slaws, and even succotash. Not to mention Marjorie's Mac and Cheese, finished off with something special on top.

"We take Cheez-It crackers and we grind them up and we sprinkle it on top of our macaroni and cheese, we make our own homemade cheese sauce every day, we make it all day long so it stays creamy and delicious, and the top has this delicious layer of crusty Cheez-Its," she says.

Of course the star of the show is the chicken. All-natural free range birds that marinate in a top secret brine for a full day, then slow cook in a rotisserie oven imported from France for two and half hours until the skin is crispy, the meat is juicy, and every piece is just about perfect.

"I wanted it to be the best and the finest, and I really truly believe I've achieved that. So when you take that first bite, it's unlike any chicken you've ever put in your mouth in your entire life, I absolutely guarantee it," Marjorie says.
