Project Bread Begins Healthy Eating Program At Lawrence High School

LAWRENCE (CBS) - Project Bread launched a new program at Lawrence High School Tuesday on how to make healthy and delicious meals on a budget.

Their "Chefs in Schools" program taught cafeteria staff new ways to trick kids into eating healthier - from covering whole grain pasta with zesty sauces to pairing pizza with a hearty salad.

"They have all this stuff already. They already have the spinach. They already have all the salad ingredients in there," Chef Kirk Conrad told WBZ NewsRadio 1030.

"What I'm introducing is different techniques, different approaches, different presentations."

"This is something that's working within the confines of their food costs, their budget. Trying to put a spin on and showing them how to make a little bit fresher items, using fresher ingredients, putting it out again in a way that the kids are going to take that they're familiar with."

Conrad knows getting kids to choose salads over jelly beans is not an easy task.

The goal is to make plates look as appetizing as they taste.

"Striving for the color is really important, especially when you're dealing with little kids all the way up to seniors in high school," he said.

"If we can put in front of them the healthiest versions, the freshest vegetables, whole grains, low fat, that is a huge step forward."
