Goat Cheese Stuffed Figs in Prusciutto with Balsamic Glaze

8 oz goat cheese
Pint fresh mission figs
4 oz prusciutto-thinly sliced
1 oz balsamic glaze

Split figs, stuff them the with the goat cheese, and then wrap them with prusciutto. Preheat the oven to 350 degrees and cook them until warm. Serve with a garnish drizzle of balsamic glaze.

Herb-Rubbed Roasted Veal Roast

2 Tbsp dijon mustard
1 Tbsp prepared horseradish
2 garlic cloves, minced
1 tsp fresh rosemary, finely diced
salt and pepper to taste
1 Tbsp oil
1 veal roast

Stir mustard, horseradish, oil, garlic and rosemary together to make a wet rub. Rub the ingredients over the roast until it’s covered completely. Preheat the oven to 425 degrees, and cook for seven minutes. Turn the oven down to 350 degrees, and cook until the roast is an internal temperature of 115 degrees.

Apple Pie Egg Rolls with Ginger Ice Cream

1 can apple pie filling
1 package egg roll wrappers
1 Tbsp cinnamon-sugar

Fill the egg-roll wrappers with canned pie filling. Roll them and seal the edges like an egg roll. Fry in 350-degree vegetable oil until wrapper is lightly golden brown. Drain on paper towels and then toss in cinnamon sugar.

Ginger Ice Cream (Prepare the day before serving)

2 Tbsp ginger (more or less to taste)
1 pint ice cream

Soften vanilla ice cream, stir in crystallized ginger bits, and then refreeze.

Give And Receive Gifts That Won’t Be Returned

The best way to keep returns easy? Communicate with your loved ones to avoid gifts that aren’t a fit. Sound like too much work? Gift cards are the perfect gift for someone that you just cannot figure out what to buy for and are easy to send to a recipient who lives far away. Spectators are encouraged to use public transportation as the event is close to T stops: Harvard and Central on the Red line, and BU Central on the Green line. Several bus routes also travel near the course. Complimentary shuttles are available, which are provided by the Regatta, and run throughout the course. Its autumn seasonal beer (available through Thanksgiving), The Great Pumpkin Ale, will be on tap this fall, available in bottles and on draft, to go along with all of the tasty dining choices. Cambridge uses organic barley, traditional autumn spices and locally grown ripe, fresh, sugar pumpkins to make the beer instead of purees or canned pumpkins. It’s 4.4 percent ABV and costs $5.50 a pint or $5.99 per 22-ounce bottle. In early winter (by December), enjoy a Big Man Ale at 7 percent ABV. It’s like an American IPA, but with more color depth and a rich maltiness to it.

In October, it offers Red October, a full-bodied ale said to feature a big malt flavor and a subtle hop finish. The Octoberfest Lager is also full bodied, yet with a soft, full malty flavor. Perfect this time of year, the Pumpkin Works Ale is a favorite, with its copper color and pumpkin pie spices. Another selection for October is the Centennial Ale, a German-style amber-colored ale with a full malt flavor. Then next month, in November, it will offer its rich, smooth, full-bodied beer, the Accelerator Double Bock, amongst the many options. In winter, it rolls out options including the Winter Works, a traditional unfiltered amber German lager. Getting There

Take I-93 south to exit 7 to merge onto MA-3 south. Enjoy the scenic drive through Weymouth, Hanover and Kingston into Plymouth. An alternate route from I-93 south is to take MA-24 south to MA-104 in Bridgewater. Then follow MA-106 through Halifax and Carver into Plymouth. Continue on MA-3 south over the Sagamore Bridge and onto the Cape. From here MA-6A will allow you to view the foliage of Sandwich, Barnstable, Dennis, Brewster and Orleans, while MA-130 will take you through Marston Mills and Mashpee.

Pond Meadow Park is about 20 minutes into your drive from Boston. This conservation land of 320 acres is a great place to stretch your legs and get some fresh air. Get off of MA-3 south at the Derby Street exit to make a quick stop in Hingham at Turkey Hill. Located in the Whitney and Thayer Woods, Turkey Hill is 62 acres with a 187-foot summit, which provides plenty of scenery for photographs. There are also many walking trails that allow for varied views of the lush property. Leave some time to visit the nearby Weir River Farm to see the chickens, cows, pigs and llama.

Long Pasture Wildlife Sanctuary is 101 acres of meadows, ponds, pools and salt marsh. Red maples and oak trees are sprinkled throughout the property and add a splash of fall color. Follow the well-kept grass paths to the end to enjoy a breathtaking view of Barnstable Harbor. Keep an eye out during your walk for red-tailed hawks that might be flying through the meadows.

NEW HAMPSHIRE

Great North Woods Region

Peak: Late September, Early October

A drive along routes 2, 3, 26, 110, and 135 offer vibrant colors and the prospect of wildlife. Route 16 will take you through the 13-Mile Woods, where moose are known to roam. They are very active – and very unpredictable during the fall.

White Mountains Region

Peak: Early October

The White Mountains Region is probably the most popular in New Hampshire, with mile after mile of vibrantly colored rolling mountains.

Kancamagus Highway
One of the biggest hotspots is the Kancamagus Highway. The ‘Kanc’ is a winding 34-mile road that connects Lincoln to Conway. In between those two towns is some of the most beautiful scenery you’ll ever witness.

Franconia Notch
For the less adventurous types, pick up I-93 in Boston and take it two-and-a-half hours north into Franconia Notch State Park, you don’t even have to leave the highway. If you do hop off an exit, The Flume Gorge, and the Cannon Mountain Tramway are nearby and provide a delightful bird’s eye view.

Other Great Routes
Route 302 takes you a little further north, up through Bretton Woods, and offers the same breathtaking views of the peaking foliage. Route 49 is furthest south, so the colors may not be AS bright. The winding road rolls its way through beautiful mountains and valleys. The New Hampshire Tourism Department also recommends Routes 2, 3, 135, and/or 112 toward the Mount Washington Valley in the White Mountains region.

Central & Southern NH

Dartmouth/Sunapee Region

Further south means a shorter drive and a later peak season. The Dartmouth/Sunapee region is the place for quiet country roads, rolling farmlands, and old-fashioned covered bridges that are staples of rural New England. A good scenic ride is Route 10 North from Hanover to Haverhill.

Lakes Region

In the Lakes region, the Ossipee and Belknap Mountain ranges offer spectacular views through mid-October. Scenic drives in this region include Routes 11, 25, 28, 106, 109, 113, and 171.

Monadnock Region

Some scenic rides include Route 124 into Jaffrey, all the way into Keene on Route 101 and back through Peterborough and Sharon on Route 123; also Route 101 from Temple east to Wilton, and Route 9 between Keene and Hillsborough.

Merrimack Valley & Seacoast Regions

The last in New Hampshire to peak, you can expect to see great foliage along Routes 1A, 4, 101, 108, 125, and 155. Just in case the foliage turns out to be less than spectacular in the area, Route 1A offers a lovely 18 miles of coastline viewing to accompany.

VERMONT

Up and down Vermont, the leaves are changing. The first weekend of October, the hottest viewing spots are way up north and up the middle of the state. Further south, the leaves transform later in October. Vermont Tourism lays out 20 different routes for fall foliage ranging from 40 to 200 miles in length. Rather than list them all here, we’ll give you the link.

If you’re more of the ‘see where the drive takes me’ type person, there are a number of recommended roads to keep an eye out for.

• Interstate 89 between South Royalton and Richmond.
• Camp Brook Road and Bethel Mountain Road in Rochester.
• Roxbury Mountain Road and East Warren Road in the Mad River Valley.
• Route 125 from Hancock west over Middlebury Gap to East Middlebury.
• Route 73 west from Rochester over Brandon Gap to Sudbury.
• Route 4 from West Bridgewater to Killington over Sherburne Pass west to Rutland.
• Route 100 in south-central Vermont.
• Darling Hill Road in Lyndon-Burke
• Newark Pond loop roads

Peak: Mid-October

Suggested routes:
• Route 100 south from Warren to Killington.
• Route 103 north from Ludlow to Route 7.
• Route 7 north from Manchester to Brandon.
• Route 9 from Woodford to Marlboro.
• Route 15 from Danville to Jericho.
• Route 2 from St. Johnsbury to Richmond.
• Route 232 through Groton State Forest.
• Back roads in Walden, Cabot, Hardwick, Greensboro.
• Route 53 north from Forestdale to Route 30 in Whiting.
• Route 35 in Grafton.

TAKE A DRIVE

Massachusetts Route 2

Peak: Mid to late October

Running from Boston and extending all the way to the New York/Massachusetts state line, Route 2 is one of America’s first scenic highways (emphasis on scenic). Winding its way through historic and picturesque towns such as North Adams and Shelburne Falls, Route 2 offers an idyllic and relaxing escape from the hustle and bustle of the city. Gently rolling hills, and rustic open spaces will greet you as you make your way.

The Berkshires

Peak: Mid to late October

A continuation of Vermont’s Green Mountain range, the Berkshires run along the westerly portions of both Massachusetts and Connecticut and offer unspoiled views of foliage, rolling hills, and scenery. One of the best times to visit this region is during the fall season not only for leaf peeping but also to enjoy the towns dotted throughout this region specializing in artisan crafts, antique furniture, and seasonal treats.

The Quabbin Resevoir, located in Belchertown and the source of greater Boston’s tap water, is one of the largest man-made public water supplies in the United States. Covering 39 square miles, scenic views surround the reservoir. While you will need to drive there for your visit, the best views are by foot via the walking trails dotted throughout reservoir. CBS Boston Insider’s Note: Remember since the reservoir is the primary source of Boston’s water supply, public access is highly regulated. No swimming, littering and definitely no pets. It’s not a dog friendly walk.

Emerald Necklace Park System

Landscape architect Fredrick Law Olmstead created the Emerald Necklace Park system to offer residents a retreat from city life and the opportunity to gather together in open, picturesque spaces. Including the Boston Common, Commonwealth Avenue mall, the Riverway Fens, and the Arnold Arboretum, this system is teeming with large, mature trees – perfect for amazing fall colors. Pack a picnic lunch and enjoy the leaves in any of these locations.

The Charles River Esplanade

The sight of changing leaves against the backdrop of the Charles River is quite a sight to behold in the
fall. Although not entirely tree covered, there are definitely enough to provide a great view.
