Phantom Gourmet: Porchetta

BOSTON (CBS) – As weather starts to get a bit cooler, Dan Andelman of the Phantom Gourmet shows us where to warm up with some Italian style roast.

The menu changes almost every day at Tavern Road in Boston's Fort Point neighborhood, but the upscale Italian porchetta is one of Chef Louie Dibiccari's favorite dishes.

Porchetta is what Dibiccari describes as "a giant pork roll." The dish is essentially pork loin wrapped in pork belly with seasonings like bronzed fennel, lemon, and herbs.

"There's so many things about the pig that you can only accomplish with the pig and the porchetta shows off all of it!" Dibicarri said.

Take a drive through Milford, Massachusetts on a weekend afternoon, and you'll smell the intoxicating aroma of the famous porchetta from "Oliva's Market," which is slow-roasted for three hours with garlic and fresh fennel from their garden.

Customers can pick up their porchetta sliced and ready to go, raw, or cooked. Dibiccari emphasized that all the parts in porchetta – the garlic, the pork fat, and pork butt – combine with the natural juices to make a tasty meal.

To get a taste of some good porchetta for a cheaper price, it's available as a sandwich at "Artu" restaurant in the North End and Beacon Hill.
