BASIL KALE PESTO WITH SWEET WHITE MISO
1 cup fresh basil
1 cup lacinto kale, torn into strips
1/2 cup olive oil
2-3 cloves garlic (depending on how much you like!)
1 cup walnuts
2 heaping Tablespoons of sweet white miso ( I like Miso Master organic brand)
about a half of lemon, squeezed
a small amount of water
Simply combine all ingredients except the water in blender or food processor. Add water if mixture is too thick. Should be the consistency of a paste, not a liquid. Normally just 1/4 cup water is sufficient.
Toss with hot pasta, toss with potatoes, use in omelets, top off some pizza, or even spread on a sandwich!
Freezes well in ice cube trays. Then you just have to pop them out as needed.
