BOSTON (CBS)- What exactly is authentic Italian pizza and where can you find it around here?
Dan Andelman of the Phantom Gourmet shows us.
A lot of restaurants claim to serve Neopolitan Pizza. But Crush in Nashua, New Hampshire is so serious about their pies, they’ve actually been certified by the Vera Pizza Napoletana, an association from Naples, Italy that makes sure the dough, sauce, cheese, and even the ultra-hot oven are absolutely authentic.
At Posto in Davis Square, Somerville Chef Joe Cassinelli follows the strict Neopolitan guidelines as well, making the mozzarella cheese fresh every day, so the Margherita pizza is a beauty to behold.
Here in America, we tend to like a crispy crust that can hold a lot of toppings. But in Naples, Italy, the center of the pizza is sort of wet and floppy, so you have to eat it with a knife and fork.
