Most of us could stand to have more fresh fish in our diets, and Fresh Grocer Tony Tantillo has a recipe that makes use of both the market’s seafood section and produce aisle.
Red snapper is the star of the show here, served with some beautiful seasonal vegetables.
It’s a very simple dish to prepare. Start by heating up two pans with olive oil.

In one, add some onions and fresh squash. In the other skillet, add the fish, which has been seasoned and floured on both sides. Putting the fish in skin-up instead of skin-down will prevent it from curling up and ensure that it cooks evenly.
Next, add some baby artichokes, red onion, garlic and herbs to the pan with the fish. Finish it up with some cherry tomatoes, wine, lemon juice and a pinch of salt. All these flavors will come together, and the fish will cook to a nice, golden brown.
Right before plating, add just a dash of chicken stock for even more flavor. Put the squash on the dish first, then top with the fish and other vegetables.
